Sea lettuce is a resource under pressure in Brittany, so many processors are looking to source supplies to meet consumer demand. It must be said that this seaweed has arguments to make.

Sea lettuce is a small leafy seaweed whose shiny green colour can discolour and whiten during the summer. In the same family (the ‘Ulva’ genus), there are also filamentous green seaweed, in tubes, which used to be classified in the ‘Enteromorpha’ genus.
